One of my new favorite breakfast foods is this smoothie bowl. Add your favorite fruits, nuts and toppings to make this fun, yet nutritious breakfast. Vitamins, antioxidants and natural sugars from fruits, good fats from nuts and fiber from the granola make this a perfectly balanced meal to start the day with.
Serves: 1, Prep. time: 15 minutes
Ingredients:
1 frozen banana
1 ripe mango
1/3 cup frozen blueberries
Sliced fruit of your choice (I have used kiwi and strawberry)
3 tbsp homemade granola
1 tsp desiccated unsweetened coconut
1 tsp each of chopped peanuts, almonds, pitted dates, dark chocolate chips
1 tsp chia seeds
Directions:
Blend the frozen banana, mango and frozen blueberries to create a thick smoothie
Place in a bowl and top with your favorite fruits, nuts and toppings. Be as creative as you like with this bowl. Add in different textures and flavors to raise the fun quotient of your breakfast!
Notes: Greens like spinach or kale can also be added to the blender along with the fruits. Puffed quinoa or puffed rice can be used to replace the granola as a topping.
