Quick healthy granola with warm apple and berries

I love making this granola recipe. It is quick and makes a perfect Saturday morning breakfast. The nuts and dried fruits add different textures to the granola and the warm fruit over the top gives it a very comforting feel. This is a versatile recipe that can be modified in several ways. Add your favorite nuts, seeds, dried or fresh fruit and serve with creamy yogurt, milk or as is.





Serves: 1

Ingredients:

1/2 cup rolled oats

2 tsp chia seeds

2 tbsp chopped walnuts

1 tbsp chopped almonds

1 tbsp chopped pitted dates

2 tbsp peanut butter

1 tbsp honey or sweetener of choice (optional)


1/2 golden apple - chopped into 1/2 inch pieces

4 - 5 strawberries - chopped into 1/2 inch pieces

1/2 tsp freshly squeezed lemon juice

1 tsp ground cinnamon


Directions:

  1. In a frying pan, add the oats, nuts, seeds and dried fruit and dry roast. Add 1 tbsp of coconut or any neutral flavored oil if needed. I did not. Stir constantly to avoid burning the dry ingredients.

  2. Add the peanut butter and let it melt in the pan before stirring it through the granola. Add more peanut butter if you like the mixture to clump together. Adding sweetener will also help with clumping (I did not add any sweetener). It will take 5 to 7 minutes till everything turns golden brown. Turn heat off and place the granola in a bowl.

  3. In the same pan, add the fruit, cinnamon and lemon juice. Stir well. In a minute, the fruit will start oozing its juices and will start softening. Cook to achieve desired consistency. I like to have a bite in my fruit so I only cooked it for 2 to 3 minutes.

  4. Add the fruit over the granola and serve with yogurt or milk.




This granola with warm fruit topping reminds me of a warm fruit pie or crumble. It makes a very satisfying breakfast or mid-day snack. Do try it and let me know how you like it.
