Garlic sesame Soba noodles with bok choy

This is another quick recipe that is ready in under 30 minutes and is very satisfying. Soba noodles are made of buchwheat flour. Buckwheat possesses good quality plant protein and antioxidants. It has a slight nutty flavor that goes really well with the sesame, garlic and ginger in this recipe. This recipe comes together really quickly and makes a quick and light summer weeknight dinner.


Serves: 2, Prep. time: 10 minutes, cook time: 10 minutes

Ingredients:

  • 4 to 5 cups of chopped bok choy

  • 5 green onions

  • 2 large cloves of garlic

  • Salt

  • 1 tbsp any neutral flavored oil

  • 2 cups cooked Soba noodles

  • 2-3 tbsp roasted sesame seeds

  • Cilantro leaves for garnish

Sauce:

  • 1/2 inch piece of ginger, finely chopped or minced

  • 3 tbsp soy sauce

  • 2 tsp sesame oil

  • 1/2 tsp ground black pepper

  • 1 tsp crushed red pepper (chili flakes)

  • 1 tsp brown sugar (or sweetener of choice)

Directions:

  1. Cook Soba noodles according to package instructions.

  2. Thoroughly rinse the bok choy and green onions. Roughly chop the bok choy and the green onion (bulbs and greens). Finely chop the garlic cloves.

  3. Heat any neutral flavored oil (vegetable/canola oil can be used) in a pan or a wok. Add the chopped garlic and green onions. Stir fry for a minute. Then add the chopped bok choy and season with salt (1 tsp should be enough). Stir fry for 3 minutes.

  4. Mix all the ingredients for the sauce in a separate bowl. Add the sauce to the pan containing the bok choy. Mix well.

  5. Add the cooked Soba noodles and toss until well mixed.

  6. Serving suggestion: Add the noodles and bok choy in a bowl and sprinkle with roasted sesame seeds and cilantro leaves.

NOTE: The sesame oil has a lovely fragrance and nutty flavor and a little goes a long way. If you like, feel free to drizzle some over the noodles before serving.
